Hospitality fit-out involves more moving parts than almost any other project type: interior design, custom joinery for bars and banquette seating, specialist MEP for commercial kitchens, and strict Civil Defence and food safety compliance often all against an opening date tied to a lease, an investor commitment, or a peak season.
Fortezza’s in-house structure was built precisely for this level of complexity. Our design team, bespoke joinery workshop, and MEP engineers work as a single coordinated unit, which matters most in hospitality projects, where a kitchen extraction route, a ceiling detail, and a banquette seating run all have to be resolved together, not negotiated separately between three different subcontractors under deadline pressure.

Designing for Service, Not Just for the Opening-Night Photograph
An F&B interior’s true test comes weeks after opening, once the initial launch buzz fades and the venue is running on a normal Tuesday service. Durable, easy-to-clean surfaces in high-touch areas, kitchen layouts that support real service flow rather than a designer’s floor plan, and back-of-house storage sized for actual delivery volumes all matter more, over time, than any single design flourish.
Our approach involves operators and kitchen consultants early in the design process, so that back-of-house functionality is designed alongside front-of-house atmosphere, rather than resolved as a compromise once the dining room design is already locked.

Navigating Dubai's Hospitality Compliance Requirements
F&B venues in Dubai face a compliance layer that few other project types match Dubai Municipality food safety requirements, Civil Defence fire and kitchen suppression standards, and, for venues within malls or hotels, additional landlord and operator design guidelines. Our MEP team manages kitchen extraction, suppression, and drainage design specifically to meet these requirements, and our project managers coordinate the associated approvals as part of the delivery programme, protecting the venue’s opening date from compliance-related delays.
